Farmers Market Radish Slaw

I've been looking for a great radish recipe for a long time. There are always so many amazing varieties at the farmers market but I never really had a good creative use for them, besides salad. (And that's kind of boring!) Then I came across this recipe in Cooking Light. It is one of the best slaw dishes I've ever had, mainly because the peppery taste of the radishes are so unique and unexpected. I also added salad turnips for a little sweetness and mustard, well... because it just fits! Also, don't throw away the greens. Just add them to a great minestrone soup. There's so much flavor, it would be a shame to waste!

THE STUFF

·      3 ½ cups shredded radishes
·      ½ cup salad turnips
·      2 cups finely chopped yellow bell pepper
·      1 ½ cups shredded carrot
·      ½ cup white wine vinegar
·      ¼ cup Dijon mustard
·      4 tsp raw sugar
·      1 tbsp chopped dill
·      1 tbsp olive oil
·      ½ tsp salt
·      ½ tsp black pepper

THE PREP

Combine first 4 ingredients in a large bowl.

Whisk the remaining ingredients together and drizzle over slaw.

Toss and serve!

This is one of those super easy recipes that's so good, it shocks you.  Enjoy when on the go or when you're just getting home from work.

THE STUFF

2 cloves minced garlic
1/4 cup honey
1/3 cup orange juice
1/3 cup low sodium soy sauce
1/3 cup green onions, chopped
2 tsp freshly minced ginger
2  7oz portion wild caught salmon (farmed is very fatty)

THE PREP

Mix the first five ingredients together until evenly combined into a marinade. Reserve 2 tbsp of marinade and place the remainder, together with the salmon, in a plastic bag.  Allow to marinate in the fridge for 30 minutes - 2 hours.  Don't over marinate!

Preheat grill to med heat.

Smooth 1 tsp ginger over the top of each salmon fillet.  Place on the grill, and drizzle the marinade you set aside on top.  Grill on the skin for about 12-15 minutes.  Serve with lemon broccoli (recipe below!)

THE STUFF

1 Bunch Broccoli, trimmed to 3 inch pieces
1 lemon, sliced
salt and pepper to taste

THE PREP

Combine broccoli and lemon slices.  Season with salt and pepper.

Steam 5-8 minutes until broccoli is tender, but not mushy.  It should still have a nice green color.

Yes, it's really that simple.  Serve it and enjoy.  It's surprisingly amazing!
