Grilled Honey Ginger Salmon with Lemon Broccoli

This is one of those super easy recipes that's so good, it shocks you.  Enjoy when on the go or when you're just getting home from work.

Grilled Honey Ginger Salmon
 *********************************************************************************

THE STUFF

2 cloves minced garlic
1/4 cup honey
1/3 cup orange juice
1/3 cup low sodium soy sauce
1/3 cup green onions, chopped
2 tsp freshly minced ginger
2  7oz portion wild caught salmon (farmed is very fatty)

THE PREP

Mix the first five ingredients together until evenly combined into a marinade. Reserve 2 tbsp of marinade and place the remainder, together with the salmon, in a plastic bag.  Allow to marinate in the fridge for 30 minutes - 2 hours.  Don't over marinate!

Preheat grill to med heat.

Smooth 1 tsp ginger over the top of each salmon fillet.  Place on the grill, and drizzle the marinade you set aside on top.  Grill on the skin for about 12-15 minutes.  Serve with lemon broccoli (recipe below!)

Lemon Broccoli

THE STUFF

1 Bunch Broccoli, trimmed to 3 inch pieces
1 lemon, sliced
salt and pepper to taste

THE PREP

Combine broccoli and lemon slices.  Season with salt and pepper.

Steam 5-8 minutes until broccoli is tender, but not mushy.  It should still have a nice green color.

Yes, it's really that simple.  Serve it and enjoy.  It's surprisingly amazing!
